Mexi-Rice Skillet

Pantry meal perfection! You likely have all the ingredients for this easy and delicious one-pan meal that is perfect for busy nights.

Ingredients:

  • 1 red onion, diced
  • 1 Tbsp. olive oil
  • 1 packet taco seasoning
  • 1 red pepper, diced
  • 1 (4 oz.) can diced green chilies, drained
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with green chilies, drained
  • 1½ cooked rice (brown or white)
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup shredded cheddar cheese

Directions:

  1. Cook onion over medium heat in olive oil. Once onions soften, add packet of taco seasoning and combine.
  2. Add diced red pepper and green chilies and cook for 2-3 minutes. Add drained and rinsed beans, corn, tomatoes, and rice.
  3. While mixture warms, turn oven on broil. Once temperature is reached, top mixture with chesses and place in oven for 3-4 minutes to melt.
  4. Serve immediately with diced green onions, cilantro, and other desired toppings
