Avocado and Pomegranate Dip

Spice up your appetizer game with this tasty Avocado and Pomegranate dip fo your next holiday gathering.

Ingredients

  • 4 medium ripe avocados, pitted and diced
  • 2 Tbsp. fresh lime juice
  • 2 garlic cloves, pressed or minced
  • 1 tsp. salt
  • 1/2 medium red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1-2 jalapenos (depending on what level of spice you'd like, you can substitute with 1 serrano pepper), seeded and chopped
  • 1 medium pomegranate, deseeded (about 1 cup of pomegranate arils)
  • Optional: 1/2 cup crumbled feta

Directions

  1. Scoop avocado from shell into a medium-sized bowl. Add lime juice, garlic, and salt. Combine ingredients with fork or masher until avocado is creamy.
  2. Rinse the chopped onion under running water, this will help prevent the onion flavor from overpowering the other ingredients. Pat dry with a paper towel and add to mixture.
  3. Add the chopped cilantro and jalapeno (or serrano pepper, depending on what level of spice you'd like) and combine.
  4. Finally, gently mix in 1/2 of the pomegranate arils.
  5. When ready to serve, sprinkle the other 1/2 of the pomegranate arils on top of the dip along with some extra cilantro and feta (optional).
