Avocado and Pomegranate Dip
Spice up your appetizer game with this tasty Avocado and Pomegranate dip fo your next holiday gathering.
Ingredients
- 4 medium ripe avocados, pitted and diced
- 2 Tbsp. fresh lime juice
- 2 garlic cloves, pressed or minced
- 1 tsp. salt
- 1/2 medium red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1-2 jalapenos (depending on what level of spice you'd like, you can substitute with 1 serrano pepper), seeded and chopped
- 1 medium pomegranate, deseeded (about 1 cup of pomegranate arils)
- Optional: 1/2 cup crumbled feta
Directions
- Scoop avocado from shell into a medium-sized bowl. Add lime juice, garlic, and salt. Combine ingredients with fork or masher until avocado is creamy.
- Rinse the chopped onion under running water, this will help prevent the onion flavor from overpowering the other ingredients. Pat dry with a paper towel and add to mixture.
- Add the chopped cilantro and jalapeno (or serrano pepper, depending on what level of spice you'd like) and combine.
- Finally, gently mix in 1/2 of the pomegranate arils.
- When ready to serve, sprinkle the other 1/2 of the pomegranate arils on top of the dip along with some extra cilantro and feta (optional).
